Strawberry Cheesecake - My son is the Chef!!

Good morning! It´s almost weekend, happy Friday!!
Today, I decided to share with you something I´m really proud of. It is a recipe, but it was made by my son, do you believe it? True, he did it, I just took the pictures;)
The first time he did a cheesecake, he was with my mom and I couldn´t believe it!! Then, I asked him to do it again so I could take some photos and post it on www.silverliningbym.com

It´s more easy to do than it looks, I guarantee!!

Let´s start with the Jelly recipe! If you scroll down, you can see the entire recipe in English and also in Portuguese (as you know, I always translate the recipes!):

#Strawberry Jelly
  • 500g strawberry
  • 200g brown sugar
  • 10g powder gelatine
In a bowl, put the strawberries quartered and blend. Add the brown sugar, the powder gelatine and mix again, until it forms a jelly.

#Geleia de Morango
  • 500g de morangos
  • 200g de açucar mascavado
  • 10g de gelatina em pó
Coloque os morangos cortados num recipiente e triture. Adicione o açucar e a gelatina em pó e triture novamente, até formar uma geleia.






Now that we have the Jelly finished, let´s get to the Cheesecake recipe;)

Strawberry Cheesecake
Serves 8 (30 minutes)

Ingredients:
  • 6 gelatine sheets
  • 400g digestive biscuits
  • 75g butter
  • 400ml of fresh whipped cream
  • 400g cream cheese (Philadelphia)
  • Strawberry jelly
  • Red fruits to assemble
  • 100g sugar
  • Water
Directions:
Soak the gelatine sheets in ice cold water and set aside. In a bowl, put the digestive biscuits and the butter. Grind.
Cover the pie dish with this mixture, and compress well. Keep it in the fridge!
Beat the 400 ml whipped cream, add the cream cheese, the sugar and wrap. Drain well the gelatine sheets and melt them 30 seconds on the microwave. Pour the gelatine into the mixture. Arrange this mixture over the pastry, to cover evenly. Once again, keep it in the fridge until it has solidified.
Cover the Cheesecake with the Strawberry Jelly. Assemble with Red fruits or Strawberries (as seen in the photos).

Cheesecake de Morango
8 pessoas (30 minutos)

Ingredientes:
  • 6 folhas de gelatina pequenas
  • 400g de bolachas digestivas
  • 75g de manteiga amolecida
  • 400 ml de natas
  • 400g de queijo para barrar (Philadelphia)
  • Geleia de Morango
  • Frutos vermelhos q.b.
  • 100g de açucar
  • Água q.b.
Prepare a geleia de morango, deixe arrefecer e reserve. Mergulhe as folhas de gelatina em água fria e reserve. Coloque num recipiente as bolachas e a manteiga. Triture.
Cubra uma forma de tarte com este preparado, cobrindo o fundo da tarteira e comprimindo-o bem. Leve ao frigorífico.
Entretanto, junte as natas, o queijo e o açucar e bata. Escorra bem as folhas de gelatina e derreta-as 30 segundos no micro-ondas (potência máxima). Verta a gelatina em fio para o preparado anterior. Disponha esta mistura sobre a base de bolacha, que já deve ter endurecido, e leve, novamente ao frigorífico até solidificar.
Cubra o Cheesecake com a geleia de morango e decore-o com frutos vermelhos ou morangos.
